[Los Angeles] [American] The Foundry on Melrose - 令人驚艷的新派美式料理

能夠讓客人一吃就不會忘記的餐廳, 必須具備幾個重要的基本元素, 包括美味的料理, 優良的服務, 以及優美的用餐環境. 其中, 用餐環境是非常主觀的一環. 有人喜歡冷冽的設計, 也有人喜歡家庭式的餐廳. 若是以在服務風格而論, 其差別絕不只是侍者前來伺候的頻率, 上菜的節奏感也是十分重要. 就像是一首交響曲, 每一個間奏都須經過多次演練, 而且需要廚師與侍者天衣無縫的配合, 才能精準的拿捏上菜的時間, 好讓客人在用餐的時候高潮不斷, 沒有冷場. 這一間The Foundry on Melrose所帶給我的驚喜, 大過於許多高價位餐廳.
用餐區域大致分為Front Patio, Dining Room, and Back Patio. 其中Back Patio是最理想的用餐區域, 溫馨又沒有太多裝飾的用餐區讓人能很放鬆的來享用美食.
Absinthe (苦艾酒) - 這一款曾經在歐洲被禁止販賣88年(1915 to 2003)的苦艾酒對我來說是十分的新奇. 上網蒐尋過後才知道這款酒因為有抗憂鬱的效能, 所以在當時禁止販賣防止民眾上癮 (有此一說這個酒是毒酒). 飲用前要在玻璃杯上放一支造型特殊的特製苦艾酒匙,在特製匙的凹處放上一塊方糖,將苦艾酒通過這個苦艾酒匙的縫隙倒入杯中,將冰水滴在方糖上,通過苦艾酒匙進入杯中,直到冰水與苦艾酒的稀釋比例在3:1~5:1之間方可飲用.
餐前麵包 - 第一道餐前麵包是小巧的麵包用番茄醬加上Parmesan cheese烤製而成. 發酵過的麵包散發了淡淡的酒香味, 一入口就充滿了驚喜.
Lobster Salad - 這道沙拉融入了東方料理中比較常見的蓮藕, 以及加入了咖哩的沙拉醬, 搭配上新鮮的龍蝦, 十分開胃.
Butternut Squash Soup with Hazelnut Crepe and Bacon - 之前就聽聞他們的湯類十分的值得嘗試, 果然十分讓我驚喜, 濃郁的湯配上了微甜的堅果可麗餅, 好看也好喝.
Midcourse - Mustard Glazed Pork Belly - 這塊五花肉煎得也是沒有讓人可以挑剔. 外酥內嫩, 上面淋上芥末醬汁, 底下的Brussels sprout, chestnut 也是相當好吃.

餐前麵包 #2 - 現烤的biscuit配上自製奶油
Beef Tenderloin with Shallots, Potatoes, Red Wine Reduction Sauce
牛肉本身十分的嫩又吸收醬汁的香氣
Roasted Cod with Carrots, Mussels, Sausage
鮮嫩的魚塊配上了微酸的醬汁, 他們的擺設也是十分值得讚許
Lemon Meringue Pie - Lemon curd with lemon segments 酸酸甜甜的好味道, 酥酥的皮比較像餅乾皮多過派皮.
Apple & Raisin Cobbler - 這是我吃過最好吃的Apple Cobbler! 超酥的bread crumb 加上大量的堅果, 底下有甜而不膩的蘋果&葡萄乾. 最上面的honey ice cream向絲絨般的口感也是吃了還想再吃.
這間餐廳雖然比一般餐廳的價位高不過他們有不少的promotion. 像每周日都有提供Lounge Prix - Fixe Menu. 周一有Latin Jazz Mondays等等活動. 如果想要在悠閒的氣氛下吃一頓美食的話, 來這裡是一個不錯的選擇.

I think this restaurant deserves a better rating. We were here for the Lounge Menu on Sunday, but it happened to collide with the dineLA week so the menu is more or less the same. However, this is by far the best dineLA menu I had this round.

Location: Plenty street parking available (Meter)

Service: Our waiter (Keith) was very nice, really look after us, explain all the dishes and answered our question professionally yet friendly. I saw others mention about the service can be a hit or miss, but we were happy with our server.

Ambiance: Yes, please ask for a seat in the back patio. Sit in the lounge if you like the crowd.

Food:


Bread #1 was served with tomato based bread with baked Parmesan cheese. Soft, fluffy, tasty.

Appetizer - I highly recommend their soup as others mentioned. Butternut Squash Soup with Hazelnut was rich in texture, delicious in taste. I haven't had soup that good for a long time. Their Lobster salad is good too, big chuck of lobsters and served with curry dressing, which is kinda interesting.

Midcourse - Pork Belly with Mustard. This one wins me over too. Pork belly was cooked crispy outside, tender inside. Right temperature that made the pork fat started to melt, yet the skin is still crispy. Mustard dressing was added to cover up some potential smell of pork which some people may dislike.

Bread #2 - Buttermilk Biscuit with homemade honey butter. I wish they can give me more of their famous bread!!

Entree - We ordered beef tenderloin and Roasted Cod. They were both good, but it did not surprise us as other courses, but still delicious. I like the sausage/mussels sauce that was placed below my cod. My friend also enjoyed the potato that comes with beef, he said it was very "different".

Dessert - Lemon Meringue Pie with lots real lemon segments. One of the best I have ever had! I like their pie crust, very flaky and buttery.
Their Apple raisin cobbler is OMG kinda good. Best I ever had too! Toasted Almond, crumbs, apples and raisins. Right amount of sweetness..I already started thinking when I can return for my next culinary adventures at this restaurant.

Its definitely a must try place if you are nearby Melrose area. They also have Sunday night live jazz band. Very nice place for people who enjoys drinking, eating and have a good time!
